Symfonium support custom themes that you can import in JSON format from the Settings / Interface / Theme, font and colors menu.
You can find an example custom theme attached to this post.
The colors follow Google Material 3 themes naming, you can use the Google provided theme builders to create them:

You can then export the themes in Material Theme (JSON) mode and import the theme in Symfonium.
Once imported, rename the theme then export it from Symfonium to share them in a smaller and better format.
Note that some specific colors have different purpose to give more freedom for the theme makers. See documentation to know what color is applied where.
